The story

When sourcing this coffee, we cupped specifically for taste quality to be able to offer a beautiful single-origin decaf coffee. The coffee undergoes decaffeination via Ethyl Acetate (EA), with the end result retaining flavor integrity thanks to this process. The coffee’s name “De Caña,” meaning “of the cane,” is a nod to the natural derivation of EA from sugarcane. This compound preserves green coffee’s inherent flavor while working as a solvent to decaffeinate tea and coffee. Coffee undergoing EA processing is steamed until it swells and the pores open, allowing for easy caffeine extraction. The coffee is then placed in a solution of water and EA to further extract caffeine. After repeating this process for multiple hours, the coffee is steamed again to remove any remaining traces of EA.
