The story
This microlot is from the Chalatenango region located in the Northern part of El Salvador. Farms here are very small on average and most of the producers grow classic Salvadorian varieties such as Pacas and Pacamara. Our coffee was grown by Antonio Ulises Lemus at 1450 meters above sea level on his farm called Finca Loma Pacha. This lot is a honey processed Pacas variety. The coffee was picked by hand fully ripe and depulped the same day, then spread on raised beds to dry in their own mucilage for 20-25 days. This is a very clean and elegant coffee so we decided to choose an omni roast profile for it. This way the coffee can be enjoyed both for espresso and filter with the same roast style.
